Herb-Roasted Salmon with Oleajoy Olive Oil

🌿 Ingredients:

  • 2 salmon fillets
  • 2 tablespoons Oleajoy Extra Virgin Olive Oil
  • 2 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • Juice of 1 lime
  • 1 tablespoon chopped fresh parsley
  • 2 sprigs of rosemary
  • Salt & freshly ground black pepper

🔥 Instructions:

  1. Preheat oven to 200°C (390°F).
  2. In a small bowl, mix Oleajoy Olive Oil, garlic, Dijon mustard, lime juice, parsley, salt, and pepper.
  3. Place salmon fillets on a baking tray lined with parchment paper.
  4. Brush the marinade generously over the salmon.
  5. Top each fillet with a fresh rosemary sprig.
  6. Roast in the oven for 12–15 minutes, or until the salmon flakes easily with a fork.
  7. Finish with a final drizzle of Oleajoy Olive Oil before serving.

🍋 Serving Tip:

Serve with roasted vegetables or a quinoa salad, and lime wedges on the side for a zesty touch.
